Make Oreo Pie Crust: Crush Oreo cookies (including the filling) in a food processor. Continue to pulse until the oreos are fine crumbs and there are no large chunks. If you don’t have a food processor, use the ziploc bag method from my Oreo Pie Crust recipe. Add melted butter to the cookie crumbles. Pulse until combined and the consistency is like wet sand.
Press the crust mixture into a 9-inch pie pan. Use your hands to pack the crumbs together on the bottom of the dish and along the sides. Freeze the pie crust for 20-30 minutes to harden.
NOTE: For a thinner pie crust, use 2 cups cookie crumbs and 4 tablespoons melted butter. See pie crust recipe for details.
Make Chocolate Pie Filling: In a large mixing bowl, use an electric mixer or a stand mixer with a paddle attachment to combine the cream cheese, mint extract, melted chocolate, sugar, and heavy whipping cream.
Add the whipped topping, and continue mixing at low speed until smooth. Make sure the mixer is at low speed to keep from deflating the whipped topping.
