Prep: Preheat the oven to 350°F. Lightly grease your 10-inch skillet. Measure ingredients.
Cream Sugars: In a medium or large mixing bowl (use a stand mixer with a paddle attachment if you have one), cream together the softened butter, vanilla extract, granulated sugar, and brown sugar. Mix until the texture is creamy and smooth.
Add Wet Ingredients: Add the egg and milk to the creamed sugar mixture. Mix until well incorporated.
Add Dry Ingredients: Add all-purpose flour, salt, baking powder and baking soda. Mix together until fully mixed and dough is formed.
Add Chocolate Chips: Add in chocolate chips and fold into the dough with a spatula or wooden spoon.
Spread Into Skillet: Scoop batter into the greased skillet. Scrape any extra off the sides of the bowl. Spread it out using a greased spatula.
Bake: Place the pan into the oven. Bake for 15 minutes or until the sides are golden and the center is just slightly jiggly.
Add Marshmallows: Top cookie with marshmallows. Return to the oven and broil for 2-3 minutes. Watch the marshmallows closely so they don’t burn. Remove from the oven when the marshmallows are perfectly toasted. Set on a cooling rack.
Top With Chocolate Sauce: Drizzle chocolate syrup on top of the marshmallow cookie skillet. Use graham crackers to dip into the cookie or use a spoon to eat it.
Tips For The Best S’mores Skillet
- Use a 10 inch cast iron skillet. Any oven safe skillet or tart pan will work but a cast iron skillet just makes the cookie a little bit better.
- Make sure your spatula is greased when pressing the dough into the skillet.
- Cook the cookie for an additional 5 minutes if you want it fully cooked.
- Use mini marshmallows or jumbo marshmallows. Keep an eye on them while the marshmallows melt so they get toasted but don’t burn.
Make Mini Marshmallow Cookies
Don’t want to make a giant skillet cookie? Make mini s’mores cookies by lining a baking sheet with parchment paper. Scoop cookie dough balls onto the baking sheet and cook for 9-11 minutes. Remove cookie sheet and add a couple small marshmallows on top and broil for another 1-2 minutes. See this S’mores Cookie recipe for more details.
TRY THIS: Banana Boat S’mores are another really fun way to serve s’mores inside.
Storing
Wrap your skillet in plastic wrap or scoop leftovers into an airtight container and store for 2-3 days.
Reheating
Reheat in the oven for a few minutes. Do not put your skillet in the microwave to reheat.
If you overcook the base you have a couple options. You can toast the marshmallows on top as planned and then cut slices and serve. Or you can skip the marshmallow top and just eat the cookie!
That depends on who you ask! The difference between a toasted marshmallow and a roasted marshmallow is mostly a regional difference.

The cookie alone is orgazmic. But add the marshmallow on top and it’s insanely good. NExt time I’m going to add a layer of chocolate between the cookie and marshmallows to see how that tastes.
