Your garden is overwhelmed with zucchini but you want to save some for later? You can freeze it! There are a couple different methods, depending on what you want to use the zucchini for once you defrost it.
How to freeze zucchini:

I've frozen them the same way you did for years and they work well for casseroles, side dishes etc.

I did freeze two big bags full but I cut them in chunks and froze in single layer on a cookie sheet then baged them, was planning on using later but how will they be for a side dish if I did not blanch them first?

I cut and cubed zucchini and froze with out blanching and they work great for casseroles, side dishes, etc.
