I love potatoes. A lot. I will eat them any way they’re prepared. Mashed is generally my favorite but give me some fries or a baked potato and I’m happy. But it will make me really happy to eat crispy smashed roasted potatoes that are tender in the middle.
I found this recipe on TikTok and it’s so good. It’ll be a new go-to roasted potato recipe.
If you’ve never cooked potatoes this way you’re definitely missing out. These crispy smashed roasted potatoes go well with any meal you’d pair with potatoes. I’d eat this with my favorite chicken recipe every day!
Smashed Potatoes Ingredients
- small potatoes
- olive oil
- salt
- pepper
- onion powder
- garlic powder
- crushed red pepper
- fresh basil
- fresh thyme
Instructions
Step One | Preheat oven to 425 degrees.
Step Two | Boil pot of water. Add small potatoes.
Step Three | Boil until fork tender. Your fork should go through the potatoes easily, without resistance.
Step Four | Drain. Put potatoes in a bowl.
Step Five | Drizzle with olive oil. Sprinkle with salt, pepper, onion powder, garlic powder, crushed red pepper, fresh basil, fresh thyme.
Step Six | Spread on a baking sheet lined with parchment paper or a silicone mat. I prefer the silicone mat.
Step Seven | Smash until they are about ½″ thick. Use a cup or mug to smash them. You might want to spray the bottom of the cup with cooking spray so they don’t stick.
Step Eight | Bake at 425 degrees for about 30 minutes. Flip halfway through roasting.
How to Take it Up a Notch
Ready to make these potatoes even better?? Add a little butter on top of each potato after cooking for 15 minutes when you flip your potatoes over. Beware though because you’ll want to eat them all!
