¼cupbuttermelted
18 ozfull fat cream cheese blocksoftened
¾cuppowdered sugar
1 ½teaspoonvanilla extract
2cupsheavy whipping cream
Topping
1cupheavy whipping cream
2tablespoonpowdered sugar
7Oreos6 whole, 1 crushed
Instructions
Make the Cookie Base
Pulse 16 Oreos in the food processor until they are crumbs.
Add melted butter to food process or and pulse until combined.
Add 2 heaping tablespoons of cookie crumbs to each 8 oz jar. Pack down the crumbs in the jars so the layer is even.
Make the Cheesecake Filling
In a large mixing bowl, add cream cheese, ¾ cup powdered sugar and vanilla extract. Using a stand mixer or hand mixer, beat until the cream cheese and powdered sugar are combined and the mixture is smooth. Set aside.
In a separate bowl, add 2 cups of heavy cream and whisk until stiff peaks form. Don't wash your bowl yet, you'll be making more whipped cream later.
Add the whipped cream to the cream cheese mixture. With a spatula or wooden spoon, fold together. Crush 6 more oreos in the food processor and fold those crumbs into the cream cheese mixture gently.
Use a small spoon to divide the cheesecake filling between the gars.
Decorate
Add 1 cup of heavy whipping cream and 2 tablespoon powdered sugar to the empty whipped cream bowl. Using a mixer, whisk until soft peaks form.
Transfer the whipped cream to a piping bag fitted with a star tip. Pipe a cream swirl on top of each cheesecake jar. No piping bags? No problem! Use a ziplock bag and cut a hole in the corner. Or just simply spoon your whipped cream on top of the jars.
Crush 1 more Oreo. Add the crumbles on top of the jars. Place a whole Oreo on the top of each jar. Serve.
Notes
I recommend you use full fat blocks of cream cheese (we used Philadelphia) for the best flavor. However, you may substitute for low fat cream cheese without any issues.
You can substitute the cream in the topping for spray cream.
Storage: No-Bake Cheesecake Jars will keep really well for 3 days in the refrigerator. I recommend not adding the topping/decoration until you intend to serve them.
