Make an easy apple pie in a baking pan. These apple pie squares have a shortbread crust, real apple filling and streusel topping.
Ingredients
Shortbread Crust Ingredients
2 ½cupsall-purpose flour
⅓cupgranulated sugar
1tablespoonlight brown sugar
½teaspoonsalt
1cupunsalted buttercold, cubed
1teaspoonvanilla extract

Apple Filling Ingredients
4mediumapplespeeled, cored, sliced
1teaspoonground cinnamon
3tablespoonbrown sugar
1tablespoonall-purpose flour
1tablespoonbuttermelted
Streusel Topping Ingredients
¾cupall-purpose flour
¾cuplight brown sugar
1teaspoonground cinnamon
5tablespoonunsalted buttermelted
Instructions
Crust Instructions
Preheat the oven to 350°. Line a 13x9 baking pan with parchment paper and set aside.
Pour the flour, sugar, brown sugar, salt, and cubed butter into a food processor and blend at high speed until the butter is incorporated into the dry ingredients.
Add the vanilla extract and egg yolks, and run at low speed until the dough is clumpy.
Press the dough evenly into the parchment-lined pan, and set aside.
SUGGESTED: Place in the oven in the middle rack. Prebake for 10 minutes. Make apple filling while it's baking.
Apple Filling Instructions
Gently toss the apple slices in cinnamon, brown sugar, sugar, and flour in a large bowl.
Lay apples out in two layers over the crust.
Streusel Topping Instructions
Whisk together the flour, brown sugar, and cinnamon in a small bowl.
Pour in the melted butter and mix with your hands into a crumbly mixture.
prinkle the streusel topping over the apples.
Bake
Place baking dish into the center rack in the oven. Bake for 45-50 minutes or until the apples are tender and the edges are golden brown.
Remove from the oven. Rest at room temperature for 5-10 minutes before slicing.

Tips For The Best Apple Streusel Bars
Tip 1: It isn't essential but using the food processor is an easy way to cut the cold butter into the dry ingredients.
Tip 2: Keep your apples from turning brown by adding a tablespoon of lemon juice to the apple slices if you won't be topping them with the streusel right away.
Tip 3: The crust should come out a little bit soft. It shouldn’t be too hard.
