Easy buttermilk pancake mix!

Pancakes should be fluffy, tasty and not take forever to make. I always look for a recipe that doesn’t require separating eggs and isn’t fussy. To make the next pancake breakfast even easier just mix up the dry ingredients and put them in a jar to be quickly mixed with the egg and buttermilk when you have a pancake craving.

Ingredients
  1. 1 cup cake flour or all-purpose flour
  2. 1 teaspoon sugar
  3. 1 teaspoon baking powder
  4. 1/2 teaspoon baking soda
  5. 1/2 teaspoon salt
  6. 1 egg, lightly beaten
  7. 1 cup buttermilk
  8. 2 tablespoons melted butter
Instructions
  1. Mix the dry ingredients. Add the wet ingredients. Mix until just combined. Do not over mix. It will be a bit lumpy, that's O.K. This recipe serves 4 people, if you are light eaters and there are other things to eat. I double it. I always have cake flour on hand. I've also made it with half cake flour and half unbleached flour. It is best with all cake flour but it is still good with all purpose flour.

    They should. Just not as fluffy. I made them without buttermilk once. I did mom’s buttermilk substitution (1 Tbsp. vinegar + milk to make 1 cup). It didn’t taste like the buttermilk version. I am assuming the regular milk version would be about like that. Do you have cow’s milk there?
